
So easy and so delicious. An easy fast replacement for french toast that pleases many.
- 6 eggs
- 1/4 cup cream or milk
- Tsp vanilla
- 2 tsp cinnamon
- 1/2 loaf bread slices. French or white best.
- 1 banana diced
- 1/4 cup chopped pecans – optional
- 1 Tbs brown sugar for top
Preheat oven to 375 degrees
Beat eggs the add milk and all spices.
Cube bread and mix into egg batter not to break up cubs but soak up badder.
Fold in banana sprinkle top w nuts and brown sugar.
Bake in8x8 glass dish 30 minutes

Serve hot w maple syrup.
Creative dish you can add all types of fruits. Blueberry is really good in place of banana nut.,

I was raised on a large farm in a small community of Long Shop, Virginia. Just a stones throw from Blacksburg, Va and a short drive to the WV boarder. I grew up appreciating Appalachia cooking with low budgets and home grown veggies. What honestly tastes better than a warm tomato out of the garden sliced fat with salt and pepper? Maybe a bowl of good brown pinto beans and cornbread. Or even better grilled trout fresh caught from the creek!
