This 1-2-3 recipe turned out so yummy I thought I’d share. I only got the finish pot-full pictured but it was gobbled up. Cold fall days mom would make a huge pot of stew. She give us kids a tin bowl full with a wooden spoon and we pretend to be cowboys around the campfire eating stew and telling stories.
This I made in my pressure cooker or a All day crock pot works just fine.
- Stew beef cubed and fat trimmed( 2 lbs)
- 1 cup flour
- 2-3 Tsp oil
- 2 lg carrots
- Two stalks celery
- Baby red potatoes
- Med onion
- 1 green pepper
- 1 Cup white mushrooms sliced
- Tsp garlic chopped
- S and pepper
- Tsp paprika
- 1 can roasted red tomatoes
- Three cups water
- Tbs season salt ( garlic parsley)
- Rosemary sprig in bag
- Stew seasoning packet – or tbs browning
- 1 cup frozen peas
Toss meat in flour to coat with seasoning salt. Brown in oil in cooker. 7- 10 min
Add chopped onion , water and seasoning pack cook 30 minutes on meat settings. ( crockpot brown in separate pan. and veggies. Then
Release steam and add all the rest of ingredients. Cook 40 minutes.
Release steam and stir in peas. Serve after 5 minutes allowing peas to get tender..
Serve over rice or butter egg noodles.

Serves 4 plus

I was raised on a large farm in a small community of Long Shop, Virginia. Just a stones throw from Blacksburg, Va and a short drive to the WV boarder. I grew up appreciating Appalachia cooking with low budgets and home grown veggies. What honestly tastes better than a warm tomato out of the garden sliced fat with salt and pepper? Maybe a bowl of good brown pinto beans and cornbread. Or even better grilled trout fresh caught from the creek!
My childhood was a dream... and what has made my passion for food- sharing good meals with good friends and loved ones.
My food always has a story and always in sizes to share.
