Basil Jelly… have you ever?

Sweet for savory- Im a believer

So when the basil record crop came in I had to find some extra options. This was a simple recipe that packs a wonderful flavorful punch.

Simple four ingredients

2 cups tightly packed basil leaves chopped 4 cups water. 5 cups sugar. 1 packet surejel Three drops green food coloring

Bring chopped basil and water to a boil then turn off heat and cover for 10 minutes. Strain and return 3 2/3 cup water to pan.

Add pectin and sugar and bring to rolling boil for two minutes. Addcolor to your liking. Strain ladel into small prepared jars.

Water bath 10 minutes.

The flavor that pulls from the basil is amazing. Serve with a string cheese and crackers or compliments to pork or lamb.
