Marinated Oven Broiled Flank Steak(when the grille is under four feet of snow)

What a fabulous time to clean out the freezer during a major snow blizzard. To my glorious surprise under the frozen peas, popsicles and frozen dough I find a beautiful Flank Steak. No seriously my grill let alone the patio is under 4 feet- yes 4 feet of snow. That’s Central Oregon Living. So I opted to oven broil with great success. A bit worried I ruin this great cut of meat but it turned out tender,juicy and most definitely yummy. I hope you enjoy.

Marinade

Large zip bag or sealable container

  • 3/4 cup soy sauce
  • 2 Tbs worshishishire (I can never spell) sauce
  • 1/4 cup veg oil
  • Four tablespoons balsamic vinegar
  • 2 tsp garlic powder
  • 1 tsp black pepper
  • 2 heaping Tablespoons of brown sugar or 1 Tbs white sugar. Pending your sweetness likes.
  • 4 crushed and minced garlic cloves. Or two teaspoons canned minced garlic
  • (Optional 1 tsp meat tenderizer seasoning)

Marinade thawed flank steak min 2 hours in fridge to over night. Shaking and massaging marinade a few times to really cover.

Take out of fridge 1 hour before cooking to bring to a room temp.

Use a broiler pan or improvise like me. I foiled wrapped a shallow sheet pan and used a cookie grate that insert perfectly.

Heat pan under broiler 5-6 inches from top on high for min 5 mins to really get hot. Carefully remove pan and place Flank steak carefully in center. Return to oven and cook 6-10 mins then flip another 6-10 min. Pending on rareness. Pictured was 8 min each side. Came out med.

allow to rest 10 min before slicing.

thin slice against grain and serve w favorite starch. This time I served over a nice white jasmine rice and light side salad. Yum!!! I do miss the smoky of a grille but what a great alternative.
