I cant take full credit for this recipe. My sweet mother-law introduced me to the honey and teriyaki Sauce and coconut cilantro rice. So light, simple and satisfying.
- 1 pound ground pork unseasoned
- 1/2 cup chopped red onion
- 1/2 cup chopped carrot
- 1/2 cup red bell pepper
- 1/2 cup chopped water chestnuts
- Tsp minced garlic
- 3Tbs fresh ginger grated
- 1/2 cup teriyaki sauce
- 2 Tbs honey
- Tbs oil
- Romaine lettuce cleaned and dry
Rice -ricecooker
- 1.5 cups jasmine rice
- 3 cup water
- 1/2 cup unsweetened Coconut milk
- 2 Tbs fresh lime juice
- 1/4 cop fresh chopped cilantro
Brown meat breaking apart as it browns. Set aside in a separate bowl.

While the meat is browning chop vegetables and have ready to cook.

Bring oil hot in pan again and add all vegetables and sauté for 7-10 minutes until onion wilts.
Add meat back to pan with teriyaki and honey. Simmer until meat really glazed.
Rice steamed- fork toss with coconut milk and cilantro and lime juice.

Assemble wraps and enjoy!

I was raised on a large farm in a small community of Long Shop, Virginia. Just a stones throw from Blacksburg, Va and a short drive to the WV boarder. I grew up appreciating Appalachia cooking with low budgets and home grown veggies. What honestly tastes better than a warm tomato out of the garden sliced fat with salt and pepper? Maybe a bowl of good brown pinto beans and cornbread. Or even better grilled trout fresh caught from the creek!
My childhood was a dream... and what has made my passion for food- sharing good meals with good friends and loved ones.
My food always has a story and always in sizes to share.
