
This is an easy throw together in one bowl recipe. I have a smoothie blender to purée the fruit base. Also you can sub the egg with applesauce to go vegan with this muffin, nice replacement for over night oatmeal or just fast and simple. Very filling.
Recipe
Dry ingredients
2 c oatmeal (shown quick oats)
1/2 cup almond flour
1 tsp baking powder
1Tsp tumeric
1Tb cinnamon
1/4 cup sliced raw almonds
2 Tb flax seeds
1/2 C unsweetened coconut
Orange zest 1/2 tsp
Wet
1 bananna
1 C blueberries
1 sm orange peeled and seeded
1/4 cup water
Blend to smooth
2 lg eggs
2 Tbs coconut oil
1/4 cup maple syrup (optional)
Mix all and spoon into coconut oiled muffin pan



Bake 375 for 25 min
Store in airtight container or freeze
