
Whats better then left over tacos after an amazing taco dinner. Taco Pie! So Im so blessed with a dear friend that sent home amazing amounts of leftovers. MaryLou makes the best traditional tacos in all of Oregon!
She sent me home with her amazing chicken filling, rice and beans plus much much more.

So this is that solution for all the stale crumbs in the bottom of the corn chip bag. You can also use left over shells.
- 2 cups crushed corn chips
- 1 cup shredded cheddar or Mexican cheese blend
- 2 cups taco meat ( chicken, beef, pork)what ever you have left over.
- 1 cup Mexican rice
- Refries beans
- 1/2 additional cheese
- All taco salad toppings of choice.
Preheat oven to 350 degrees
Crush chips in bag with rolling pin or meat cleaver

Mix 2 cups crushed chips and 1 cup cheese press into 9×9 glass dish.

Bake 12 minutes.
Top with layers of rice, beans , meat and remaining 1/2 cup cheese.
Bake an additional 15-20 minutes til fully heated thru and cheese is melted.
Serve with favorite toppings. Crust is chewy cheesy and can be as wonderful and your creative toppings!

I was raised on a large farm in a small community of Long Shop, Virginia. Just a stones throw from Blacksburg, Va and a short drive to the WV boarder. I grew up appreciating Appalachia cooking with low budgets and home grown veggies. What honestly tastes better than a warm tomato out of the garden sliced fat with salt and pepper?
