
With the new years resolutions – we’re all jamming in exercise gym time and trying to do healthy dinners fast. 55 minutes from start to table for this entree. Start your clocks- I put to the test.
Oven bakes parmesan chicken skinless breast w jasmine brown rice.
Rice( start first in rice cooker) brown rice takes a longer time.
- 1 cup jasmine brown rice
- 2.5 cups water
- Tsp olive oil
- Dash of salt
(Pre-heat oven 400 degrees)
Chicken skinless Breast
- Fillet three breast in half
- Pound flat w meat mallet

- Separate bowl mix…
- 1 cup light mayo
- 1/2 cup shredded parmesan cheese
- 1 Tsp Laureys seasoned garlic salt
- 1/2 tsp black pepper
- Small pinch of shredded cheddar ( just cause I like it! )

- Mix and dredge chicken on all sides
- Lightly roll in Italian bread crumbs

Spray a wire rack with no stick and arrange on cookie sheet to bake. No stick to make easy clean up.
Sort chicken breast on rack bake 30 minutes. At 400 degrees preheated.
Next step- Start water on stove for broccoli spears. Salad-spinach and iceberg with tomato and carrot shreds.
Plate.
Note: Don’t over bread chicken.I think mine pictured was too heavy.
Easy. Clean as you go. Fast! Enjoy!
