The best of both worlds of the beast of the garden and fresh zing of summer lemon. A delicious combination that take the old zucchini bread to a new height!

- Three cups flour
- 3 large eggs
- 1 tsp salt
- 1 Tbs baking powder
- 1/2 tsp baking soda
- 2 Tbs fresh lemon juice
- 2 C sugar
- Zest of two large lemons
- 2 cups shredded fresh zuchinni
- 2 loaf pans greased and lightly floured
- 2 tsp vanilla
- 1 cup canola oil
Heat Oven to 350 degrees
Mixing bowl. Mix sugar and zest massaging to release the fragrance. Add eggs, vanilla, and oul. Mix well. Mix all dry ingredients in separate bowl. set aside.
Add dry to the wet items and mix well. Fold in shredded zucchini. Evenly distribute in baking pans. Bake 55 mins.
Cool for 20 minutes then glaze.
Glaze: 2 cups powder sugar and 3 tablespoons lemon juice. Mix well. spread on warm bread allowing it to drizzle down sides. Enjoy!
