Simple and oh so good is this dinner favorite at my house. Chopping up a simple slaw and grilling fat fillets under 10 minutes makes a bright healthy option for summertime dinner. I always have a nice mango salsa on hand in the pantry and a few lime wedges top it all off well.
Marinade for tilapia
•olive oil to cover fish
•herb citrus rub/specialized for fish
•pepper
•light sprinkle cayenne pepper
•1/2 tsp cumin
Marinade thawed fish at room temp 10 min. As you prep slaw.
Fine shred cleaned Brussels sprouts about a cup
Fin shred cabbage about a cup
Fine shreaded carrot
Dressing
Mason jar or bowl
2 Tbs mayonnaise
Tbs apple cider
Tbs yellow mustard
Finely chopped 1/2 small or blended sweet onion
Tsp onion salt
Tsp honey
Blend and lightly toss on slaw.
Heat grill on high heat. Quick wipe with oil or cook on foil with nostick.
3 min each side.
Assembly.
I serve my tacos on mini whole wheat soft shells with lime and avacado and topped with spicy mango salsa.

Maybe a bowl of good brown pinto beans and cornbread. Or even better grilled trout fresh caught from the creek!
